FOOD HYGIENE COURSES

CIEH Level 2 Award in Food safety in Catering   

This is a 6 - 8 hour course. The syllabus covers:

  • Introduction to Food Safety and HACCP
  • Food Safety Law
  • Food Safety Hazards
  • Taking Temperatures
  • Refrigeration, Chilling, and Cold Holding Foods
  • Cooking, Hot Holding and Re-Heating Foods
  • Food Handlers
  • Principles of Safe Food Storage
  • Cleaning
  • Food Equipment and Premises

At the end of the course the candidates will sit a 30 question multiple choice exam. Candidates who achieve 20 correct answers or more will pass the exam and receive a certificate.

This course will benefit anyone working in a situation where food is prepared, cooked and served. It is relevant to all catering operations - for example, pubs, hotels, restaurants, travel, contract catering, leisure centres, fast-food outlets, hospitals, care and nursing homes, schools, prisons or armed forces.

Level 4 certificate can be arranged on request
